Food safety in Uganda remains a critical public health and economic concern, with foodborne diseases affecting an estimated 1.3 million people annually. This report provides a comprehensive, evidence-based analysis of the sources, impacts, and current
gaps in Uganda’s food safety landscape, with a special focus on aflatoxins. It brings together the
latest research, policy analysis, and practical recommendations from leading experts, practitioners,
and stakeholders in the field.
